Melange Hot Hot Chicken Sandwich Reivew. I had the pleasure of speaking with Chef Elias Taddesse of Melange DC to get the inside scoop about his now-famous Hot Hot chicken sandwich. Chef Elias is not a fan of reinventing the wheel; he lets me know that instead of changing the already amazing Nashville Hot Chicken sandwich completely, why not modify it to make it his own. For starters, add Mitmita (a blend of dried chilies and species native to Ethiopia) and Kibbeh (butter infused with herbs and usually used in its liquid state for cooking, also native to Ethiopian cuisine) makes this southern staple have a distinctively Ethiopian flare.

As pictured, the sandwich is a substantial portion; there is a VERY healthy helping of juicy fried chicken. I’m sure I don’t need to explain how important it is and how much skill it takes to keep your fried chicken Juicy. The chicken is dusted with the mitmita powder and served on a jalapeno cheddar bun with poached daikon radish and spicy dill yogurt; it does pack a mean punch, so make sure you order a milkshake to cool you off!! This is a sandwich I would return for over and over again. It’s just THAT good.
